Shrimp Salad In Shells
Serves Four 12 large pasta shells 1 tablespoon virgin olive oil 2 cloves garlic, chopped 6 ounces cleaned, deveined shrimp 1/2 Walla Walla onion, finely chopped 1 medium tomato, finely chopped 1/8 teaspoon salt 1/2 cup sour cream or yogurt (non-fat works fine) 1/4 cup cilantro, stemmed and shredded 1 tablespoon calendula petals Cook pasta according to package directions. As water heats, heat oil with garlic over medium-high heat. Add shrimp and onion to pan and cook, stirring, until shrimp are opaque (2 to 3 minutes). Add tomato and salt, cover pan, reduce heat to low, set aside. Blend sour cream or yogurt with the cilantro and the shrimp mixture.
