Mocha Walnut Pudding Cake
Mix together in a large bowl: 1 cup all-purpose flour 3/4 cup sugar 3 Tbsp unsweetened cocoa powder 2 tsp baking powder 1/4 tsp salt 1/8 tsp cinnamon 1 tsp instant coffee 1 cup chopped walnuts Combine in a small bowl: 1/2 cup milk 4 Tbsp melted butter 1 tsp vanilla 1 Tbsp dark rum or brandy Pour the liquid ingredients over the dry and mix with a wooden spoon. Don't overmix. It will be quite thick. Spread the batter in an 8x8" or 9x9" baking dish. In a small bowl, make the topping by mixing together: 1/2 cup brown sugar 3 Tbsp unsweetened cocoa powder Pour the the topping over the batter, then pour 1 2/3 cup hot water over the top. Bake at 350 F for 35 - 40 minutes. Let cool an hour or more before serving.
