Salmon with Brown Butter Breadcrumb Topping
submitted by butterflydog from NY, US 4, 6 oz salmon or cod fillets 5 oz butter 4 tsp chervil chopped 4 tsp dill chopped 4 tsp chive chopped 1/2 cup fresh white bread crumbs ( about 2 slices ) 1 Tbsp horseradish, drained salt and pepper to taste Season fish fillets. Place on greased baking sheet. Mix butter with herbs and drained horseradish and breadcrumbs and roll in a cylinder as one would for compound butter. Chill fully. Slice mixture into 1/4 thick slices. Place slices to cover fillets. Bake fish in a 400F oven for 10 minutes. Place fish under broiler until slightly browned on top. Yield : 4 servings.
