Oven Baked Crab Dip
Baked Crab Casserole
Baked Crab Au Gratin

Oven Baked Crab Dip

2 (8 oz.) pkg. cream cheese, softened
1/3 cup mayonnaise
1 Tbsp. powdered sugar
1 Tbsp. Chablis or other dry white wine
1/2 tsp. onion juice
1/2 tsp. prepared mustard
1/4 tsp. garlic salt
1/4 tsp. salt
1 (6 oz.) can crabmeat, drained & flaked
Chopped fresh parsley

Combine first 8 ingredients; mix well. Gently stir in crabmeat. Spoon
crabmeat mixture into a lightly greased 1 quart baking dish. Bake at 375
degrees for 15 minutes. Sprinkle with parsley. Serve warm with crackers.



Baked Crab Casserole

1 loaf day old French bread
Butter to grease dish
1 med. onion, diced fine
2 cup well packed crabmeat
1 cup celery, diced fine
1 cup mayonnaise
1 tsp. dry mustard
1 tsp. salt
3 lg. eggs
3 cup milk
1 cup sour cream
1 lb. Monterey Jack cheese, grated

Trim crust from the bread and cut in 1/2 inch pieces. Place half of the
bread cubes in the bottom of a well greased 9x13 inch baking dish. In a
bowl, mix the onion, crab, celery, mayonnaise, mustard and salt. When
mixture is well combined, spread evenly over the bread cubes. Place
remainder of the bread cubes over the crab mixture. Beat the eggs well and
add the milk. Pour over the contents of the baking dish and cover.
Refrigerate 4 hours or overnight. When ready to bake, spoon the sour cream
over the top, sprinkle with paprika, and bake for 1 hour and 15 minutes at
325 degrees. Spread the cheese over the top of the casserole, and place in
oven until cheese melts. Serve hot. Makes 12 servings.




Baked Crab Au Gratin

1 med. onion, chopped
1 green pepper, chopped
1 red pepper, chopped
8 lg. mushrooms, sliced
2 lg. tomatoes, peeled, seeded and diced
1/4 cup butter
1/4 cup all-purpose flour
1 1/4 cup heavy cream
2 1/4 lbs. cooked crab meat
Salt and pepper
1/4 cup sliced almonds
2 cup grated med. Cheddar cheese

Preheat oven to 450 degrees. Saute the vegetables in butter until tender.
Sprinkle with flour, stir until well blended. Add cream and simmer crab
meat and season to taste. Spoon hot mixture into a greased shallow baking
dish. Sprinkle with almonds and cheese. Bake in oven just until cheese is
golden.
