Default Coca-Cola Chicken

Coca-Cola Chicken

Yield: 4 servings

1 chicken (2 1/2 to 3 pounds), cut up
Vegetable oil
2 Tablespoons finely minced onions or scallions
3/4 cup Coca-Cola
3/4 cup ketchup
1 Tablespoon Dijon-type mustard
Minced parsley to taste

Brown chicken in 10 inch skillet and remove from pan. Pour off excess oil.
Add onion and cook gently until limp, but not brown. Mix remaining
ingredients; stir well in pan, scraping up all sticking particles. Return
chicken to the sauce. Cover and simmer gently until tender, about 35 to 45
minutes.

This chicken is even better if prepared the day before and reheated gently
before serving. Store covered in the refrigerator in a stainless steel,
enamel or plastic container. The sauce is also good with other meats.
