Zesty Zucchini Cubes

Serving Size : 8

1/4 cup red wine vinegar
1/4 cup dry red wine
1/4 cup honey
1 tablespoon chopped red onion
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground red pepper
1 clove minced garlic
4 cups diced zucchini

Combine the first 10 ingredients in a microwave-safe bowl, and stir well.
Microwave at HIGH 2 minutes or until mixture is hot; stir in zucchini.
Cover; marinate in refrigerator at least 1 hour. Drain and serve. Serving
size: 1/2 cup
