Default Mole Sauce

Mole Sauce

1 lb onion, diced
3 cups peanut butter
10 ancho peppers
4 lbs oven roasted tomatoes
1 Tbsp salt
4 tsp pepper
3 Tbsp garlic powder
3 Tbsp ground cinnamon
1 Tbsp nutmeg
2 teaspoons allspice
5 Chipotle peppers
1 lb raisins
1 quart of chicken stock
3 Tbsp unsweetened chocolate Cocoa

Take Anchos and Chipotles and soak in hot water for 30 minutes. Split
tomatoes in half and rub with olive oil, salt and pepper and roast for 30
minutes in oven at 350 F. Sautee onions in olive oil till translucent.
Transfer anchos and chipotles and roasted tomatoes into food processor and
puree with raisins. In a large sauce pot put ancho chile puree, peanut
butter, chicken stock, chocolate, nutmeg, cinnamon, allspice, pepper, salt
and sugar and simmer for 30 minutes.
