Eclair Dessert
Twinkies Cake
Cherry Supreme

Eclair Dessert

1 box, (3 packages) Graham Crackers
2 packages Instant French Vanilla Pudding
8-oz. carton, thawed Cool Whip
4 cups Cold Milk

Mix pudding with 4 cups milk, blend in cool whip.
In a 13x9x2" glass baking dish, layer whole graham crackers on bottom,
then add 1/2 the filling, then second layer of graham crackers, pouring
remaining pudding over crackers.

Frost:

2 packages (1-oz) Choco-o-bake
1 tsp. Vanilla
2 tsp. White Karo Syrup,
3 Tbsp. melted Butter
3 Tbsp. Milk
1-1/2 cups Powered Sugar

Mix this together until well blended. Pour over top of dessert.
Refrigerate overnight or at least 6 hours before serving, it needs
set-up time.
It is rich and probably will serve about 10
Place plastic wrap loosely over dessert after cool whip sets up about 30
minutes.



Twinkies Cake

10 Twinkies, sliced lengthwise in half
1 large package Instant Vanilla Pudding
4 Bananas, sliced
1 8 to 10 oz. package frozen Strawberries, thawed or 1-1/2 pints fresh
Strawberries, sliced

1 12-oz. carton Cool Whip, thawed
Place Twinkies in bottom of 13x9x2" baking dish. Make pudding according
to package directions. Spoon on top of Twinkies. Put layer of bananas
on top of pudding, then layer of strawberries. Make sure you have used
all your fruit on each layer. Top with container of cool whip making
sure you have sealed pudding and fruit well, by running cool whip to
edges of dish all the way around. This also must sit up about 6 hours
before serving. Put a sheet of plastic wrap loosely over dessert once
cool whip sets up.




Cherry Supreme

2 cups Graham Cracker Crumbs
1/3 cup melted Butter
1 tsp. Vanilla
1 8-oz. package Miniature Marshmallows
2 16-oz cans Cherry Pie Filling
1/2 cup chopped Nuts
4 Tbsp. Brown Sugar
4 Tbsp. Powdered Sugar
1 8-oz. carton Cool Whip, thawed

Blend crumbs, nuts, butter and brown sugar. Put cracker crumb mixture
into bottom of 13x9x2" glass baking dish that you've sprayed lightly
with non-stick spray. Make sure their packed down and pushed into
corners well. Bake for 6 to 10 minutes in a preheated 475 degree oven
until lightly browned. Remove from oven and cool completely. Sitting
dish on rack helps it cool faster.
When crust is thoroughly cooled, mix cool whip, vanilla and powdered
sugar together. Spread a layer on crumb base. Push marshmallows into
cool whip layer. Cover with the cherry pie filling. Cover with
remaining cool whip mixture. Sprinkle with more chopped nuts. After
dessert has set in fridge 30 minutes, lay a piece of plastic wrap
loosely over dessert. Serves 8 to 10




Key Lime Pie

1 large Graham Cracker Crust, homemade is best, bake in 475 degree oven
6 to 10 minutes or until lightly browned
2 8-oz. packages Cream Cheese, softened
1 can Sweetened Condensed Milk
1 12-oz. carton Cool Whip, thawed
1/3 cup Key Lime Juice or if you can't find, use 1/4 to 1/3 cup fresh
Lime Juice. Taste as you add a little until you have a nice not to
tangy flavor.

Whip cream cheese with electric mixer until nice and smooth, no lumps.
Add sweetened condensed milk and blend well with mixer. Add lime juice
and blend with mixer until well blended. By hand fold in cool whip.
Continue the over, under folding with rubber spatula or large spoon
until nicely blended, taking care to not break down cool whip to much.
Your trying for volume.
Pour or spoon mixture into cold pie crust. Seal filling by bringing
filling to edges of pie plate all the way around. Cover with plastic
wrap so a film or skin will not set up.on outer part of filling.
Refrigerate at least 4 hours before serving. When serving, add a dollop
of cool whip or whipped cream on top of each piece. Serves 8





Black Forest Dessert

1 Fudge Brownie Mix
1 can Cherry Pie Filling
1/4 tsp. Almond Extract
1 8-oz. carton Cool Whip, thawed

Prepare brownie mix according to directions on box. When you are ready
to serve, open cherry pie filling and add the almond extract right in to
cold can of cherry filling, stir well. Be sure to refrigerate Cherry
Pie Filling, it needs to be cold. Serve a nice square of brownie warm,
even if you must micro-wave a few seconds. Place brownie on attractive
dessert plate, spoon cherry filling over and place a generous dollop of
cool whip over top.
