Beef Almande (Dressed Steak)

Serving Size : 6

Dressing for steak
1 pound sausage meat
1/2 Loaf Whole Wheat Bread, crumbled
1 tsp sage
1 tsp parsley
4 Eggs, Hard-boiled, chopped
1 shot sherry (or other wine)
Salt and pepper to taste
4 pounds steak, enough for 6-8 people

Mix ingredients together, spread on flattened steak, and roll and tie
securely. Bake in a dish with wine and a cup (250 mL) of water. Cook
gently for 2 or 3 hours. The remaining liquid may be thickened for gravy.
