Default Neapolitan Cookies

These Neapolitan Cookies are not from a mix but are very easy to put
together:

Neapolitan Cookies

1 cup unsalted butter, room temperature
1 1/2 cups granulated sugar
1 egg
1 tsp. vanilla extract
2 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. almond extract
5 drops red food coloring
1/2 cup chopped nuts (walnuts or pecans)
1 ounce unsweetened chocolate, melted
2 Tbsp finely chopped maraschino cherries (drain well on a paper towel)

Mix all of the dry ingredients and set aside.
Line a 9x5" loaf pan with wax paper.
Cream butter and sugar, beat in the egg and vanilla extract. Gradually
add the dry ingredients to the butter mixture, beat 3 minutes.
Divide the dough into 3 equal portions. To the first portion add the
almond extract, red food coloring and cherries and mix well. Pat the
first prepared dough into the pan.
Second layer: add the chopped nuts, mix well and pat evenly over the
first layer. Third layer: add the melted chocolate and mix well; pat
over the second layer. Cover and refrigerate at least 4 hours. Preheat
oven to 350 . Remove the dough from the pan-cut in half length-wise
then slice each half into slices about 1/8th" thick. Place on a
parchment paper lined cookie sheet and bake about 10 minutes. Remove to
a wire rack to cool. Makes about 5 dozen. Freezes well. Jan
