Simple Tomato Sauce

2 Tbsp. olive oil
1 clove of garlic, chopped or mashed
1/2 small onion, chopped fine
2 pounds medium sized tomatoes, chopped

(Tomatoes can be skinned and seeded before cooking if you desire, but this
is not crucial and it's a matter of personal taste.)

1/2 teaspoon of oregano, dried (optional)
1/2 teaspoon basil or a few fresh basil leaves (optional)
Salt and pepper to taste

Add olive oil to a saucepan and heat. Cook onions stirring until soft but
do
not brown them. Add garlic and cook until fragrant, but be careful not to
burn the garlic. Add tomatoes and cook stirring from time to time over a
medium heat for about 10 minutes or so, or until they start to soften.
Add herbs if desired. Season to taste. Reduce heat and simmer on a low
flame
for about another 10 minutes or so until reduced.
When done the sauce can be strained through a sieve or used as is.



A Simpler Tomato Sauce

Tomatoes, cut up in chunks
Minced garlic
Some fresh basil roughly chopped
Olive oil
Salt and pepper

In a pan, add olive oil and start to cook chopped tomatoes over a medium
heat. Add garlic and fresh basil. Cook until everything breaks down.
Season.
Can be served as is or passed through a strainer.



A Simpler Tomato Sauce

Tomatoes, peeled, seeded, and chopped. You want the flesh of the fruit.
Butter
Salt and pepper
Parsley (optional)

In a pan under a low flame add butter and slowly let the tomatoes sweat.
Season and let cook until the mixture becomes smooth. Strain or use as is,
or further reduce. Add chopped parsley if you so desire.



Salsa Cruda

(a raw tomato sauce for pasta)

Tomatoes (don't bother to peel and seed them), diced
Red or white onion, chopped
One clove of chopped garlic (optional)
Basil, parsley, chopped
Olive oil
Salt and pepper

This is a different way to dress pasta for a quick and healthy meal. Any
pasta can be used, but it goes well with angel hair.
Combine all the ingredients while pasta is cooking. Drain the pasta but
leave a very little bit of the pasta water. Add the salsa cruda to the
warm
pasta. Adjust seasoning if desired.
