Awesome Apple/Cranberry Pie
This recipe has received nothing but rave reviews from everyone who has tasted mine or tried the recipe. 4 Large Macintosh Apples 1 Granny Smith Apple 1 Cup fresh cranberries (rinsed and de-stemmed) 3/4 Cups hard-packed light brown sugar 1/4 Cups white refined sugar 1/3 cup flour 1 Tbsp ground cinnamon Mix dry ingredients together with a fork until you've achieved a fine uniform mixure. Set aside. Peel, core, and dice apples into 1/2 " pieces. (I use the 1/2" pieces instead of larger cuts to tenderize the apples) Pour apples into a large mixing bowl and add the dry ingredients. Mix thoroughly with a large spoon until apples are completely coated with a brown syrup. Pour in fresh cranberries and continue to mix until the apples and cranberries are evenly dispersed. Pour entire mixture into a 9" deep dish pie shell. Frozen (thawed, of course) shells like Pet Ritz are a good shortcut...for the tops, Pillsbury Ready-Made Pie Crusts are wonderful! Place apprx. 6-7 pats of butter around the top of the apple/cranberry mixture. Cover the pie shell and mixture with the top crust. Seal the edges with a fork, dipping the fork in hot water every 2-3 presses. Vent pie top with even slices and sprinkle top crust with more ground cinnamon. Bake at 350 degrees for 50-60 minutes.
