String Beans with Paprika Sauce
submitted by amanda 2 pounds string beans, strung, cut in pieces 2 tablespoons butter 2 cups paprika sauce (recipe below) Paprika Sauce Ingredients 1 pint milk 1 - 3 tablespoons butter 1/2 tsp salt 1 - 3 tablespoons flour paprika, to taste To make paprika sauce, make 31/2 cups of white sauce by scalding 1 pint of milk, and Melting 1,2 or 3 tablespoons of butter, depending on desired consistency, in a saucepan. Add half a teaspoon of salt, and 1,2,or 3 tablespoons of flour, depending on desired consistency, and let cook for one minute, stirring constantly. Add the milk little by little, stirring gently until it boils. Let it boil for 3 minutes.) While the cream sauce is still hot, mix in 1 tablespoon or more of paprika. Boil the string beans in salted water for about 30 minutes. Drain off water. Make the paprika sauce while string beans are boiling. Put string beans and butter in a sauce pan. Let cook for about 2 minutes, then add the boiling paprika sauce.
