Easy Bisquick Vegan Tamale Pie
1 cup Bisquick or Bisquick Heart Smart 5 ounces Medium Firm Tofu 1/2 cup Soy or Rice milk 3 Tbsp Olive Oil 1 med. Tomato (diced) 1/4 Red Onion (diced) 2 cloves Garlic (minced) 1 can Black Beans 3/4 can Yellow Corn 2 Tbsp Hot Sauce 1/2 tsp Cumin Preheat oven to 400 Grease 9" Pie Pan with Olive Oil Mix Bisquik Powder, Tofu, and Soy Milk in medium mixing bowl. Mash with fork until consistency of cookie dough. Put Olive Oil in skillet or frying pan, add remaining ingredients one by one, allowing one minute between each. Pour half of Bisquick mix into pie pan, add contents of skillet, add remaining bisquik mix and smooth over top.
