Spinach Cheesy Eggs
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Millicent Estate in Justin, Texas in 1982. 2 packages frozen chopped spinach 6 ounces cream cheese with chives 8 hard boiled eggs, shelled and halved 1 cup shredded cheddar cheese 1 teaspoon salt 2 teaspoons freshly ground black pepper Cook spinach in 1/4 cup boiling water until thawed and no lumps remain. Remove from heat and drain thoroughly. Add cream cheese to the spinach, stirring until it melts into the spinach and gives it a creamy texture. Season with salt and pepper. Butter a shallow baking pan and spoon the spinach into the pan. Arrange the halved eggs in the mixture. Sprinkle cheese over the contents. Place pan under a preheated broiler until cheese melts.
