Tower Inn Stuffed Salmon with Pesto
Tower Inn Stuffed Salmon with Pesto 3 salmon filets, 7-8 oz. each 3 oz crumbled feta 3 oz diced tomatoes 2 oz diced onion dried dill 1/2 lemon 3 oz Spinach Pesto (recipe follows) Butterfly the Salmon. Place onion, tomatoes, feta on top of the filets. Do not fold until almost done. Place in an oiled pan and cook at 350 F preheated oven for 20 minutes. Fold the salmon and sprinkle dill and squeeze lemon juice. Turn oven off. Let it rest in the oven for 5 minutes. Spinach Pesto 2 cups spinach 1 tsp chopped garlic, 1 oz of almonds or pinenuts 1 tsp of parmezan olive oil Put above incredients (exept olive oil) in a food processor. Chop on high for 30 seconds.
