Enough chicken to fit one layer deep in an 8" by 8" baking dish One twenty ounce can of pineapple tidbits 1/4 cup of soy sauce 1/2 tsp ginger 1/4 cup onion, minced 1/4 cup coconut, grated Drain liquid from canned pineapple into a small mixing bowl. Add soy sauce and ginger and stir. Pour the mixture into the baking dish and place chicken inside turning once to coat both sides. Marinade for at least and hour but as long as overnight. Sprinkle pineapple, onion and coconut on top of chicken, place in oven and bake at 350 F for about an hour and a quarter. Serve on rice. Notes: -You may use any cut or variety of cuts of chicken you prefer, bone in or boneless. Skinless would be better as it will be less greasy. Larger pieces will cook longer; chicken tenders will cook faster. -This recipe can be doubled using a larger baking dish. -The coconut and the onion (either or both) may be eliminated according to your preferences. -- Rec.food.recipes is moderated by Patricia Hill at .
