I have two cakes you might want to check out:

Walnut Apple Cake

Base:

250 ml (1 cup) oatmeal or oats
50 ml (1/4 cup) chopped walnuts
50 ml (3 tablespoons) brown sugar, packed
50 ml (3 tablespoons) margarine or butter, melted

Filling:

250 g (8 ounces) cream cheese, softened
125 ml (1/2 cup) sugar
2 eggs

Topping:

5 apples, cored, peeled, and sliced
125 ml (1/2 cup) sugar
30 ml (2 tablespoons) flour
30 ml (2 tablespoons) BACARDI Spice rum
125 ml (1/2 cup) chopped walnuts

Preheat oven to 180 C (350 F). Combine oatmeal, nuts, brown sugar and
margarine in food processor. Process approx. 30 seconds. Press onto bottom
of 23 cm (9 inch) springform pan. Bake at 180 C (350 F) for 15 minutes.
Blend cream cheese and 125 ml (1/2 cup) sugar in bowl. Add eggs and mix
with electric beater. Spread mixture over base. Mix apples with 125 ml
(1/2 cup) sugar and 30 ml (2 tablespoons) flour. Pour in BACARDI Spice rum
and toss. Arrange apples evenly over cream cheese filling. Sprinkle apples
with walnuts. Cook in oven 40-45 minutes at 220 C (425 F). Cool and serve
with heavy cream if desired.

Serving Size: Serves 6 to 8

250 grams butter
200 grams sugar
1 teaspoon vanilla essence
5 eggs
250 grams flour
2 teaspoons baking powder
Cream butter and sugar


Add eggs one by one, add dry ingredients and lastly the apples Put into a
round tin (making sure you have lined the tin with greaseproof pater and
butter) Bake for about 1 hour at 150 C or 325 F or until skewer comes out
clean When cool dust with icing sugar or serve with whipped cream.
