Lemon Bars
Lemon Bars
makes 16 bars Crust 1/4 cup flour 1/2 cup butter, softened 1/4 cup powdered sugar 1/2 teaspoon vanilla Filling 1 cup sugar 2 eggs 1/3 cup fresh lemon juice 2 tablespoons flour Grated peel of 1 lemon Powdered sugar Preheat oven to 350 F. Combine all crust ingredients in small bowl; beat at low speed 2 to 3 minutes until mixture is crumbly. Press onto bottom of 8-inch square baking pan. Bake 15 to 20 minutes or until edges are lightly browned. Combine all filling ingredients except powdered sugar in a small bowl. Beat at low speed until well mixed. Pour filling over hot crust. Continue baking 15 to 18 minutes or until filling is set. Sprinkle with powdered sugar; cool completely. Cut into bars; sprinkle again with powdered sugar.
