Default Carnitas

Alright, it's getting dead around here since Wayne left, so I guess I'll
have to step out from lurker mode.

There seem to be several ways of making carnitas, with milk or with citrus,
crisped in the fryer or not.

Are these regional differences, and if so which come from which region?
