If you want to make like the Indio's....
This recipe makes a nutty Guacamole
that is traditional.
Ratio per average size mashed Avocado:
1/4 tsp ground cumin(comino)
1/4 tsp cayenne
1/4 tsp salt
Some Avocados are larger than others,
just keep the ratios even and adjust
till it tastes salty enough.

If you want to make it like Gringos......
use the above ratios and add all kinds of junk
chopped up onion (ok but not traditional)
chopped up garlic (ok but not traditional)
lime juice(makes it bitter)
tomatoes (makes it watery)
sour cream (barf)

Simple but adequate

Scoop an avocado into a sauce pan
Add about 2 T salsa
Add about 2 capfulls of RealLemon
Add some salt

Mash with potato masher.

And that's it.

Sometimes, simple is better. This is the recipe most restaurants will use.

Title: Tex Mex Guacamole

Ingredients:

2 ripe avocados, approximately 1 cup
1/8 teaspoon salt
1/4 teaspoon garlic powder

Instructions:

Slice the avocados lengthwise in half and remove the seed. Scoop out the flesh
into a bowl and mash with a fork. Stir in the salt and garlic powder.
Refrigerate for 15-20 minutes to allow the garlic and salt to blend.

Yield: 1 cup guacamole

Slightly mashed ripe avocado.
The juice of a fresh lime (NOT LEMON)
Salt to taste.

If you want garnish a few cilantro leaves sprinkled on top. (not mixed in)

Default Guacamole Recipe

Find 4 cados.
Skin them and get the green stuff out in a bowl.
Mix is with the following:
1 small chopped red onion
1 large chopped tomatoe
2 oz of a commercial salsa
2 limes juiced
1 tin of chopped olives
This is from a well known restaurant and it is very good.
You then buy Fritos Scoops and put the mix in a bowl and serve with the
Fritos. You have some sour cream to add to it and some crumbled bacon.
Wonderful treat.

I make mine as follows:

Couple of Ripe Avocados
Couple of squeezes of lime
Couple of shots of Tabasco Sauce or whatever kind you like.
Salt
Black Pepper
Garlic Powder
Onion Powder
Diced and seeded tomato (optional)
Mix together

Default Guacamole Recipe

I highly recommend buying yourself a molcajete to grind your
ingredients together, then add ripe avocadoes and serve in the
molcajete for an truly authentic look.

4 ripe avocadoes.
1/2 white onion, finely diced (save some for garnish)
1/2 bunch cilantro, leaves only (save some for garnish)
1 ripe roma tomato, chopped for garnish
2 chile serrano, chopped (seeds optional)
sea salt to taste.

Put onion, cilantro, chiles and salt in the molcajete and grind to a
wonderful juicy paste. Add ripe avocado and mix in. Taste for salt and
garnish with diced white onion, chopped tomato and cilantro. Serve
with tortilla chips.

Default Guacamole Recipe

2 ea Avocado, pitted & peeled
1 ea Onion, minced
1 ts Chili powder
1 ts Salt
1/2 ts Pepper, ground
1 ea Tomato, chopped

Mash avocados with silver spoon. Beat in the other
ingredients until creamy. Refrigerate.
You can substitute 2* green finely chopped chili
peppers instead of chili powder.

two aguacates (mash them first, then keep the seed in the mix to keep
it from going brown)
juice of as many limes as possible
salt
finely chopped onion
finely chopped tomato
more lime juice
done!
