Moles, pipians and tingas

http://www.astray.com/recipes/?show=...20and%20tingas I have never braised a tenderloin for the meat as listed in the Roasted pork for tinga recipe. For me that is a good meat in the wrong application, unless you are trying to use a leaner meat for health reasons, even then, use a loin roast or loin chops rather than the Tenderloins. A Boston Butt ( Shoulder) would be much better suited for this dish as it is for Carnitas and Pulled Pork recipes and awhole lot cheaper. BTW a point of interest, The US Government cleared the way for live pork to be shipped to Mexico for slaughter (think pork stockyards) and then be reintroduced to the US. Mexico has a few pocket of trichinosis still left to address but they to be outside this new system and are reported not be a health threat to the US Food Supply, On that same note the USDA/FDA have reduced the number of inspectors and inspections it performs under their charters. So now we must rely on the Big Agribiz companies to police themselves. Can't wait to see the price of corn, the Tortilla wars and to see if Mexico is going to continue resisting GM corn |
