First New York City Restaurant?

Can anyone tell me the name of the first restaurant in New York City to be
staff-organized in the style of Escoffier?

Cheers,

Peter:

By definition, wouldn't it be the Ritz-Carlton, which opened in 1907? This was
organized by Escoffier.
