Grilled Salmon (REC)
We went to a dear friend's place for dinner on Friday and had a
great time. I knew in advance that they were making salmon, which isn't a favorite of DH, DS, or myself. But Mom taught me to eat what I'm served, and we were happy to be invited in the first place. Much to my surprise, we all absolutely loved it! Even Miguel (DH) who is not a fish eater. It helped that male friend caught the salmon the day before (talk about fresh!), and we loved the topping they put on it. Here's a recipe of sorts, courtesy of female friend's parents, who don't measure all the ingredients, so use your own judgement. You could also put this on chicken or another kind of fish: Parmesan Salmon 1/4 C. mayonnaise 1/4 C. sour cream 1/2 C. parmesan (more or less to taste) Minced onion Garlic paste Salt & Pepper Fillet salmon, leaving skin on each side. Mix all ingredients well, spread on inner side of fish. Grill UNCOVERED skin side until done. Or bake at 350º F., UNCOVERED, in baking dish, skin side down for about 20 minutes.
