Another caramely recipe for Goomba.
* Exported from MasterCook * Brown Sugar Pecan Icebox Cookies Recipe By :Carol Peterson Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup butter -- (2 sticks) 2 cups brown sugar 2 large eggs -- beaten 1 teaspoon vanilla extract 1 cup chopped pecans 3 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon cream of tartar 1/4 teaspoon salt Brown butter well in frying pan. Pour over brown sugar and mix well. Add eggs, vanilla, and pecans. Sift together dry ingredients and add to the above mixture. Form into rolls, approxiately 1-1/2 inches in diameter, wrap tightly in waxed paper, and chill overnight. Slice thinly and bake about 12 minutes at 350°F. Source: "Pat Zastera (Carol's Mom)" - - - - - - - - - - - - - - - - - NOTES : These are similar to Pecan Sandies, but they're crisper and not crumbly. I like these better. :-) When Mom made cookies, she always made about three thousand batches at once. Instead of just refrigerating and baking the cookie dough, she often froze several rolls for future use. They usually didn't last long enough to be baked. That dough is really good frozen!! Carol |
