Default sugar substitutes

My wife loves to bake and I love her desserts. The problem is the sugar
content keeps me from sleeping if I have dessert too late in the
evening.

I understand that Splenda works well for baking and has no calories.
However will it give me a 'sugar high' (since it is made from sugar)
and keep me from sleeping?

How about the other sugar substitutes on the market?
