Default Just toss it in already!

My mom was here for a week, cooking up a storm. She made mountains of
chopped liver, matzoh balls, steak, chicken, and goodness knows what
else. I'll miss her, but my arteries are relieved.

There are a few items left in the fridge that we don't normally use,
and they're perishable, so I thought I'd use them up. Among them, most
of a quart of chicken broth and four smallish pieces of cheese (four
different kinds -- dill havarti, muenster, jack, and some wine-soaked
bleu, which I just realized I forgot to throw in the dish.)

I decided to make my "tamale pie", because it's easy and it would use
up both the broth and the cheese. I boiled three cups of chicken
broth, then added a cup of cornmeal and simmered, stirring, until it
got all nice and thick. Stirred in all the cheese (wish I'd
remembered the bleu, just for kicks), some butter, and a few slices of
jalapeno.

For the filling, I used a couple cups of chili (this batch had
chicken, beans, corn, and chipotles in it) and nearly two large cans
of olives, sliced (James is CRAZY for black olives, and when I told
him I was making tamale pie, he got all bright-eyed and said "With
lots of olives?"). Poured the filling in a baking dish, topped with
the cornmeal mixture, and put it in a 425F oven. It has about twenty
minutes left (I cook it for about a half hour, 'til the top gets
nicely golden brown).

I know this isn't a proper tamale pie, but it's a really easy way to
use up leftovers. Now to figure out what to do with all this leftover
chopped liver. I'll probably take it to work tomorrow. On Friday, they
helped me finish off the previous batch.

So what do you cook that's just a "toss it all in a dish" dish? Where
you don't measure, but you just mix or layer stuff and leave it in the
oven for a while?

Depends on exactly what it is that's left over. Sometimes it's good to toss
into a soup, or maybe I'll do tacos. Or chili. Or, if it's something good
cold, it goes into a salad. Sometimes it's just lunch nibbles.

I guess I don't have a one-size-fits-all, because it really depends on what
the leftover stuff is. But I'm pretty good about using up the bits and
piece.

Quiche, definately. A baked pasta using sauce leftover from a more
formal presentation of spaghetti and meatballs and sausage: slice up
the sausage and toss with cooked penne, sauce, some chopped herbs,
layer with mozzerella and parm, bake till bubbly. Enchiladas are also
a "toss together" kind of process...wrap what you have in tortillas,
top with sauce and cheese, bake till bubbly. I also do chicken and
rice casserole things that take basic white sauce as a start, and throw
in whatever you have in the fridge and pantry. Lots of stuff come to
mind, now that I think about it! Who needs a recipe? ;-D

That's too bad. I did enough blotter (and microdots, remember
them?) in the 70's to cure myself from doing it ever again. I liked

This reminds me of my grandfather...he used to clean out the fridge and
throw everything in the blender. "Miracle Drink" is what he called
it...your tamale pie sounds so much better! lol

No, they're teeny. About a quarter-inch square, with perforated edges.
They are made in an entire sheet, and then individual "hits" are torn
from the sheet. In the 70's and 80's they had different things printed
on them - cartoon characters, unicorns, stars and moon, etc. My
favorites where the Goofy blotters available in the midwest/Chicago
circa 1978-79. You sucked on them and swallowed them, or just
swallowed them. People claimed that if you sucked on them first, you'd
get a better buzz.

Never having been in the acid scene, I suppose that's what was
referred to as "stamps" by those in the know around here during those
times.

One hopes that because of potential chromosome damage that you
eventually took it upon yourself to get spayed...
