Default My Favorite Side Dish

Red Cabbage (Rotkohl)
Ingredients:
a.. 2 lb. Red cabbage
b.. ¼ C Canola oil
c.. 3/4 C Finely chopped onion
d.. 3/4 C Cooking apples, peeled and diced (Golden Delicious, Granny
Smith)
e.. 5 Whole cloves
f.. 3 T Red wine vinegar
g.. 1-½ C Water
h.. ½ t Salt
i.. 1 T Sugar
Directions:
Wash cabbage, core and shred.

In a very large saucepan or Dutch oven, heat oil. Add onions and sauté until
just starting to brown. Add cabbage, apples, cloves and vinegar. Cover and
simmer for 10 minutes.

Remove cover and stir. Add water and salt. Simmer for 1-¼ hours. Add sugar,
stir well, and serve. Makes 6 to 8 servings.

That's one of my favorites, too. Sometimes, reducing sugar, a bit of red
currant jelly is good.
