SALSA:
1 generous cup sliced strawberries 2 peeled, cored apples 1 peeled, sliced kiwi 2 T orange juice 1 T orange zest 2 T brown sugar 2 T apple jelly CHIPS: 8 flour tortillas nonstick cooking spray cinnamon/sugar To make salsa: Use a hand chopped to finely dice all the fruit. Stir in remaining ingredients. Chill for 30 minutes. To make chips: Preheat oven to 350. Spray tortillas lightly with cooking spray. Sprinkle each with 1 t cinnamon sugar. Slice into 8 - 10 wedges, using a pizza cutter. Place tortilla wedges on a baking sheet. Bake for 8 - 10 minutes, until crisp and lightly browned. This would be great for a summer cookout or potluck. Or even a snack for preschool or softball team or whatever. My 9 year old daughter made it all by herself and had lots of fun eating it, mostly because she made it! Super healthy, too, for kids who don't eat a lot of fruit. |
