Default Greek Recipe - Greek Meat Loaf


GREEK MEAT LOAF


Qty Measurement Ingredient

2 lbs ground beef
OR
1 lb ground beef AND
1 lb ground lamb

1/2 cup onion, chopped
2 Tbsps butter or margarine
1/2 cup carrots, shredded
1/2 cup potato, peeled and shreeded
2-1/2 cup eggplant, trimmed, pared, and shredded
2 cloves garlic, thinly sliced
2 eggs
1 cup fresh tomatoes, peeled and finely chopped
1-1/2 cups fine dry bread crumbs
3 tsps salt
1/2 tsp ground cinnamon
1/4 tsp pepper
4 Tbsps lemon juice, divided
2 Tbsps sugar


In a medium-size skillet, saute the onions in the butter/margarine for 3
minutes. Remove the skillet from the heat. Stir in the carrot, potato.
eggplant, and garlic, tossing to coat well; cover. Cook for 5 minutes
or until wilted but still crisp.

In a large mixing bowl, combine the ground meat, eggs, tomatoes, bread
crumbles, salt, cinnamon, pepper, 2 teaspoons of the lemon juice, and the
cooked vegetables, mixing lightly.

Into the 9 by 5 by 3-inch loaf pan, press the meat mixture. Turn out onto
a lightly greased, large shallow baking pan.

In a preheated 350 degrees F. oven, bake for 45 minutes.

In a cup, mix the remaining 2 teaspoons of lemon juice and the sugar,
stirring until the sugar is dissolved. Brush the mixture over the meat
loaf. Continue to bake for 15 minutes longer or until the brown and glazed.

Lift the meat loaf to a heated serving platter with 2 wide spatulas.

Make 8 servings.
