Greek Recipe - Tiropita - Cheese Pie
My apologies if I have all ready posted this recipe. I think I goofed in
sendingit on my first try. David TIROPITA (Cheese Pie) Qty Measurement Ingredient ----- ------------------- ---------------------------------------------- 1 lb fillo pastry 1-1/4 lbs feta cheese 1 lb cottage cheese 8 eggs 1/4 cup Parmesan cheese 3/4 lb butter, melted salt, to taste pepper, to taste In a mixing bowl, beat the eggs until light and creamy. Fold in the crumbed feta, cottage, and Parmesan cheeses. Season to taste. In a buttered 17 by 11 by 2-inch pan, place 1/2 of the pastry sheets, brushing each pastry sheet individually with the melted butter before adding the next sheet. Pour in the 3 cheese mixture. Cover with the remaining half of the pastry sheetes, again, brushing each sheet with melted butter. Brush the entire top of the Tiropita generously with melted butter. Place in a preheated 350 degrees F. oven and bake for 45 minutes until golden brown. Cut into squares and serve warm. Greek Recipe - Tiropita - Cheese Pie
SPANAKOPITES (Spinach-Cheese tarts) Qty Measurement Ingredient ----- ------------------- ---------------------------------------------- 1/2 lb cream cheese, softened 1 cup butter, softened 2 cups all-purpose flour FILLING: ----- -------------------- ---------------------------------------------- 1 onion, finely chopped 3 Tbsps olive oil 1 pkg frozen chopped spinach, thawed and well drained 1 tsp salt 1/4 lb feta cheese, crumbled 4 ozs cottage cheese 1 egg, beaten TO MAKE THE PASTRY DOUGH: In a mixing bowl, combine the cream cheese and butter; blend with fork. Cut in the flour. Work with hands until the dough holds together. Place on waxed paper, form into a ball, and chill overnight. TO MAKE THE FILLING: In a skillet, saute the onion in the olive oil until softhened. Add the spinach and salt. Cook over low heat until tender. In another bowl, mix the feta and cottage cheese and the egg together. Add the spinach-onion mixture and blend well. On a generously floured surface and using a floured rolling pin, roll out the chilled dough until it is 1/3-inch thick. Using a 1-1/2 to 2-inch cutter, cut the rolled out dough into rounds. Place a little of the spinach filling on each round and fold over. Mositen the edges so the tart edges will hold together. Flute the edge with a fork and prick the center of each tart. On a greased baking sheet, place the tarts. Bake in a preheated 435 degrees F. oven for15 minutes or until golden brown. Serve warm. NOTE: Tarts make be frozen before baking. Make about 100 small tarts. VARIATION: Line an 8 by 8-inch pan with crust and pour in the filling. Top with remaing crust and prick the crust with a fork. Makes nine 2-inch squares. Export Format Tomato Pie pies, vegetables 2 deep-dish pie crusts (10 inch) black pepper to taste; see note2 kosher salt to taste 2 1/2-3 lbs 3 pounds medium-sized ripe slicing; tomatoes, see note1 1 large bunch of fresh basil 4 ounces (2 cups) medium-sharp or sharp cheddar; cheese grated 2/3 cup homemade or best-quality mayonnaise 1/2 juice of 1/2 lemon 2-3 tbsp heavy cream Preheat oven to 350F Fit one of the crusts to a pie pan. Sprinkle with pepper (well) SEE NOTE2 and prick the pastry all over with a fork. Place a layer of tomatoes in the pie pan, sprinkle with a little salt.pepper and add a sparse layer of fresh basil leaves; repeat for a second, third, and fourth layer. Top with the grated cheese. Thin the mayonnaise with the juice of 1/2 lemon and spread it over the surface. Quickly add the second pie crust, fit it over the pie and seal the edges by pinching them together. Cut several slits in the dough to allow steam to escape and brush the surface with the heavy cream. Bake in a 350 degree oven until the pie is hot all the way through and the crust is golden, about 25 - 30 minutes. Let rest for 15 minutes before serving. Cut in wedges and garnish each slice with a sprig of fresh basil. NOTE1: Peel and seed the tomatoes, and cut into thickish silces. I found this cookbook at a local used book store yesterday and thought I transcribe some or possibly all of the recipes. I never intended to start anything here. I used to, year ago, post on several Fidonet echos, but since moving off bulletin boards and dail-up to DSL I have not been posting any recipes anywhere. Before that there was a cooking area on the old Prodigy. Anyway, I will continue on posting as long as some people want me to or until a moderator kicks me off. I will use the word Recipe in the title so those who object can simply ignore or delete my post. Sincerely, David |

And as most "newbies" are often teased by the regs in this NG that the price of admission is a recipe, maybe the OP took this request to heart? However, when I got up this morning and saw those 300 recipe posts, my first thought was that r.f.c. was being trolled. I like Mr Lib's recipes too, but this was a bit over the top. I am never gonna have the time to read them all - and like he said, I am sure there are some real good ones among them. Rather stick to posting your "favorite" recipes, Alan. All I wanted to do was share some recipes I found recently that sounded somewhat interesting. And no, for the most part I have not tried them yet. Nor did I feel like chit-chating about them. I found and bought a copy of the book two days ago and I was NOT trying to archive the recipes to group. I also own several recipe programs so if that is all I wanted to do I could use one of them; much less crap that way. In my opinion, anyone thinks it an easier way to archive anything by posting it is nuts. If anybody here thinks that typing in a bunch of recipes is my idea of fun they are sorely mistaken. Sharing on the other hand..... I did not neccessarily expect any thanks...but, I sure never expected to find someone of your caliber of personality here either. My titles usually include "Recipe", a hangover from my old BBS days, you could just ignore those posts. But No, you would much rather to whine and be a rude jerk! With what I have seen so far of your attitude toward what you deem unwanted recipes, I would be surprise if you ever try anything new. Have a great life. DPileggi |

People shouldn't never "flood" a group with anything, but posting recipes is a normal part of a cooking group. They don't have to be "solicited". It's been tradition to prepend "REC" in the subject line, though. -- Reg |

I have no problem with people posting recipes. It is nice to have some tried and true recipes, which is not the same as someone posting a bunch of recipes from another source. No problem, but just think about how things would turn out if every person who posts here regularly cruised around various recipe cites and just cut and pasted a bunch of recipes forthe hell of it. We would be inundated with a hundreds of extra posts. And then there is the odd asshole who decides to go ahead and do that out of spite with a threat to drown us with recipes.
