Greek Recipe - Greek Feta Shrimp
GREEK FETA SHRIMP Qty Measurement Ingredient ----- ------------------- ---------------------------------------------- 2 lbs shrimp, shelled and deveined 2 large onions, thinly sliced 1/3 cup olive oil 4 large tomatoes, peeled and coarsely chopped 3 Tbsps fresh parsley, finely chopped 1/2 tsp dried dill 1/4 tsp sugar 1/8 tsp pepper 2 cloves garlic, minced 3/4 lb feta cheese sprigs fresh parsley or dill (if desired) rice, cooked and hot In an oven-proof skillet, saute the onions in the olive oil until tender. Add the chopped tomatoes, parsley, dill, sugar, pepper, and garlic. Cover and simmer for 20 minutes, stirring occasionally. Add the shrimp. Coat each shrimp with the sauce and arrange the in a circle. Crumble the feta cheese over the shrimp. In a preheated 350 degrees F. oven, place the skillet and bake for 10 to 15 minutes, or until the shrimp are cooked and the cheese is melted. Garnish with the parsley or sprigs of fresh dill.
