Default Still too much left over!

I prepared leftover (home made but then frozen) chuck roast in gravy last
night along with some rice as a side. I still have way too much leftover!
I'm thinking of stirring it all together, adding some dark red kidney beans
or maybe black beans (yes, from a can) and spicing it up to create sort of a
one-dish Tex-Mex rice and beef dish. I could add sauteed onion and garlic,
Mexican oregano, some ground ancho chili pepper (smokey but very little
heat). Maybe a little ground chipotle or some hot sauce for a little
heat... or maybe some of those canned diced jalapenos. Just musing, here.
AC might suggest I add some corn chips and turn it into a casserole a la
Cooking with Jolene Sugarbaker LOL

Yes..Nice tortilla's and a whole new meal. I actually make a Tex-Mex
braised chuck that is a similar set of flavors.

Well, with the exception of the eggs and no potatoes for the hash (and I
don't have any potatoes), that's pretty much what I had for dinner last
night The leftover chuck roast was already in gravy and a good bit of it
went on my serving of rice. Now I'm searching for something different to do
with what is left. But thanks!

Hmmmm, beef jambalaya. Interesting concept! I normally make jambalaya with
andouille or chaurice sausage. Along with onion and garlic I'd need to add
diced bell pepper (I only have Penzey's dehydrated) and some diced tomatoes
(I always keep a few cans of those around). It's a thought Thanks,

I thought from the title that this was going to be Miracle of The Ham story.

You're on the right track, but using the wrong peppers (IMHO.) Ancho is
OK, but don't mix it with those others you listed.
I'd probably cook it to pieces with ground New Mexico chilies, beef
bouillon, onions, garlic, cumin, oregano, etc, and shred it for making
soft tacos and burritos.

Yer welcome.

If you keep stretching out your original dish, will you ever run out of
it? Kinda/sorta "The Theory of Leftover Evolution." Maybe in another
life/thread.

i use leftover beef in my mexican casserole.
add spices, salsa, and layer with tortilla's.
sprinkle with cheeses and bake.
serve on chopped lettuce and sour cream!

Hee! With leftover meat, I nearly always make hash. Potatoes,
onions, other veggies, and a small dice of the meat, sauteed in butter
until it all gets crispy. Mmmmmmmm.

serene, who makes turkey hash every day-after-thanksgiving

The one thing I won't do with leftovers I'm trying to use up is to
expand them by adding to them. <lol>

If I feel I'm really done with them, the Border Collie gets a treat!

But the meat is already in gravy (it was crock-potted to begin with and I
froze it in the gravy from the drippings). When I make corned beef hash
there certainly isn't gravy mixed in with it.

I don't worry about it. I just use less (or no) butter -- gravy's
mostly fat, after all.

Actually, no. I removed all but about a Tbs. of fat before I thickened the
gravy. Too late anyway, I've proceeded with the Tex-Mex theme, with a few
adjustments. I didn't use the chipotle pepper. I did decide on black beans
and some ground ancho pepper. It tastes pretty good!

It still amazes me how many have been here for years but continue to
have obnoxious food failures. Doesn't anyone here learn any lessons?
And no...I don't really care what you "contrived" with three green
beans, one scoop of grits and two cups of a questionable container
from the back of the refrigerator........delete the pics.....that is
even more repulsive.

I do like to make "leftovers Frittata".
Eggs and cheese mixed with beef scraps topped with gravy. ;-d

I'd just keep the rice as a side, maybe adding some mushrooms to that.
