Is this a no no? I seem to recall hearing something about it

My experience, cheesy cream of cauliflower soup and cream of broccoli
soup freeze fine. I haven't tried most of the creamed soups I make as
they are gobbled up too fast. OTOH, creamed soups do not can up well.
It is better to make the soup without the milk or cream then add that
when reheating.

I would make the soup without the cream and add it when
I reheated it. I think that would be better than freezing it
with the cream ... I picture separating or other unpleasant
outcomes from freezing cream of soup.

Could be wrong.

I didn't put cheese in my soup. I was just wondering if freezing
would be a problem since I make frozen meals for my elderly Mom and
wanted to share this soup with her. Good thing I put it aside before we
had ours because there is very little left....<G> ........Sharon

Cream tends to break up when frozen so soups made with cream don't usually
freeze well. However, you can take the basic soup and freeze it without the
cream, then add cream to it later.

I didn't have cream and used evaporated milk instead...would that
make a difference?....moot point right now, since I have already put two
small containers into my freezer.....bur I'm still interested in finding
out what others think....thanks....Sharon

I''ve frozen Baked Potato Soup (cream and sour cream) and it freezes
(and thaws) fine.
