Default Yummy Salad/Veg Creation

Mmmmm, I made this up last night, it was very popular!

Saute a bunch of bitter greens in a skillet. I used beet greens,
arugula, and baby spinach.
Splash with 1 T balasmic vinegar and cook for a few more minutes, until
soft.
Top with a few spoonfuls of cooked white beans.
Crumble Italian tuna filets, packed in olive oil, over each serving.
Top with parsley.

It was a HUGE hit! Something a little different, pretty healthy, and
delicious!!

mmm...

....and tuna nicoise.. also with woild rockets... mmm
