Default Friday's Dinner 10/02/2006

As promised here is tonight's menu: mesclun salad with tomatoes,
onions, lightly herbed viniagrette, and light sprinkling of sunflower
seeds; grilled whitefish with a light orange sauce, steamed asparagus,
steamed carrots; desert will be a low fat yogurt topped with a little
brandied berry mix garnished with fresh strawberries and a sprig of
mint; dinner wine will be a white but I haven't decided what yet. I'm
thinking something light, on the dry side, with a slight fruitiness. To
accent the orange sauce, I'll stuff the fish with slices of lemon, lime,
and orange as well as a sprig or two of lemon thyme. I've done this
before. It gives just a nice hint of citrus and thyme throughout the
fish. The orange sauce is quick and easy to make. It gives a lot of
flavour without adding a lot of calories. DH and I have made a pact to
take a nightly after dinner walk as well so that should help. The
nightly snack will be frozen blueberries. They are full of
anti-oxidants and perfect for curbing any late night munchies

Geez... that sounds delicious and healthy too.

I know this sounds rhetorical but enjoy!
