Made a batch of stuffed green and red bell peppers (stuffing made with
ground round, hot italian sausage, tomato sauce and couscous, topped
with cheddar cheese).

Any suggestions as to a side dish? Usually I serve some sort of fruit
salad, but just looking for something a little different this time
around.

roasted mixed veggies...
sphegetti squash...
roasted cauliflower...
a tossed salad with strawberries and almonds in with the greens

Stuffed peppers and stuffed cabbage "demand" mashed taters!

I like a cucumber and tomato salad with them.

Absolutely! Mashed potatoes are best. A salad is good, too, but I
sometimes forego the salad for some rolls instead. My hubby might think
I was trying to kill him with so many vegetables.

Smashed (skin on) potatoes go well with stuffed peppers.
