Default Convection Oven installed

Well, I couldn't wait to use it and the kids suggested chocolate chip
cookies as a good test. haha

A true convection oven has a third element and a fan that circulates the air
around for uniform cooking. Plus it's supposed to cook faster and at a
slightly lower temp.

It said I could cook 3 cookie sheets of cookies at one time, so I did. I
have never gotten 2 sheets of cookies to cook well unless I switched their
places in the oven halfway through the cooking time and still it wasn't that
great... not bad though.

I baked with the convection oven temp 25 degrees F lower than what the
recipe called for.... I still needed to cook the full 10 minutes the recipe
asked for. The 3 sheets of cookies though came out equally cooked and
equally browned. I was really examining for a difference and I could not
detect any. The bottoms of the cookies were beautiful as well. I did use
my Silpats, which work really well with cookies. I baked thirty six 3 1/2
inch cookies in thirty minutes. That included mixing of the dough, baking
and cooling for 2 minutes before removing from pan to cooling rack.
Normally, that would have been 60 minutes of baking alone for cookies that
size. My neighbors let me throw the old oven on their "dump trailer", so I
took a plate of warm cookies over to them and they couldn't believe how fast
they had come out of the oven.

I'm impressed!
