Dinner tonight
I have a small pot of great northern beans (about 1/2 lb. dried) simmering
in chicken broth, seasoned with a little bit of cooked bacon, minced onion and garlic, pepper, bay leaf and some dried thyme. When the beans are tender I'm going to slice up some kielbasa (cut into large pieces then sliced lengthwise) to pan fry and serve with the beans. Should be a nice satisfying meal and last me a couple of days. If I get really ambitious I'll bake a batch of cornbread muffins. Jill |
