What should I use to make Fat Free Yogurt?
 
I am guessing I use skim milk and non fat dry milk........

Any Ideas?

Just some skim milk - and some yoghurt to give it a start (you need the
bacteria). The method is available through Google :)

Skim milk. Adding 1/3 cup of nonfat dry milk per quart will give it a
thicker texture, but it isn't required. You need a starter--either
yogurt with live cultures, or a freeze-dried culture (available in
health food stores):

The milk should be around 108-110 degrees F when the starter is added;
heating it to 180 and letting it cool seems to make the finished product
last longer (or so my own informal study concluded).

It has to stay warm for at least 4-6 hours so needs to be kept
well-insulated (maybe in an ice chest with several large jars of very
warm water), or with some mild heat source--maybe in an oven that's
turned off, with the light kept on. Or a thermos. Keep the stuff around
108 to 110 F, and not above 112.

I do use a yogurt maker, but as it came from a thrift store for $2.50,
what the heck.

I've been doing just that for a while. It will separate, and I find it
needs at least 6 hours to set. Matter of fact, gotta make another
batch tonight.

We always just used a doubled recipe of powdered skim milk.
Double the powder to water ratio.

It really does make good yogurt!
