Default My grandmother's fruit cake recipe

My grandmother died on this day last year. In her honor, I am posting her
favorite fruit cake recipe for the holidays. I hope someone reading this
enjoys it. Thank you.

1 pound candied cherries
1 pound candied pineapple
1 pound pitted dates
1 pound chopped pecans
32 ounces flaked coconut
3 tablespoons all-purpose flour
28 ounces sweetened condensed milk
2 tablespoons brandy

Preheat oven to 300 degrees. Lightly grease a 10 inch tube pan. Line bottom
of pan with greased parchment paper.

Chop fruit and nuts in a mixing bowl. Add coconut and mix well. Stir in
flour, sweetened condensed milk and brandy.

Pack firmly in tube pan. Bake for 1 and a half hours.

Three tablespoons of flour? (It looks kind of sweet.)

Very different from mine, since I don't use coconut, but it sounds very
good. I prefer fruitcakes that are mostly fruit.

For those who think otherwise, it should actually be considered a
"confection" not a cake. Many fruitcakes are like that.

Thanks for posting!

But....but......but, this has nothing to hold it together. I think she
has either left a few things out or mis-typed the recipe.

It has sugar to hold it together. I've seen recipes like this before;
this one is just kind of extreme. I don't know if it'll work or not.

This fruitcake is certainly different and I absolutely love coconut.
Unfortunately, it's hard to take a recipe from someone with a screen
name like that seriously.

I dunno. Call me squeamish but I'm leery of taking a recipe from
someone with that nickname. Just me.

I thought the nickname was kind of cute.

I don't think the recipe will work, but even if it works it doesn't look
very good to me. I don't think I'll try it. and I just made 2 loaves
of Bischofsbrot (that looks like it oughtta have an umlaut somewhere)
last night.

I've had one like this before. Basically the flour and condensed milk are
just there to adhere the fruit together in a cake shape :-D
I really liked the one I tried. It was very different and VERY fruity.

The recipe is correct. That is exactly how she made it. It is delicious but
it is very rich.

As for my screen name, there is a story behind it. My real name is Adara
Dankenni DuPont. One time, me and 2 of my friends decided on the spur of the
moment to enter a Pretty Pussy contest. One of the judges told me, "you have
a nice looking ****". For some reason, that made one of my friends start
laughing uncontrollably and she couldn't stop. After that, it became an
inside joke. Everytime we would meet someone in a club, my friend would
introduce me as "the girl with the nice looking ****".

Have a nice day.

I agree. I have eaten fruitcake like that but never made it. I enjoyed
it.

I just realized something about you, Joann. You have low self esteem and it
makes you feel better to label people. It's not that much different from
being a racist. I'm sure I'm not the first to notice this. Maybe I'm the
first to mention it to you.

I made it according to the recipe and it held together quite well.
Basicly, it is a giant macaroon with fruit and nuts added. This one
I would not describe as VERY fruity, but iteems to me, one could
add even more fruit and less coconut and it still would hold together
adequately.
