Can I freeze leftover ricotta for use later in cooking? Or will freezing
alter it in some way?

I never had an issue freezing it since it's always used for cooking...

I've frozen ricotta in the past and it was fine for cooking purposes.

Thanks, my store only carries the whole milk ricotta in the large
containers -- much more than I need at one time. It'll be great to have
ricotta on hand rather than having to run out for a special purpose.
