Lightly pan fried a boneless skinless chicken breast, sprinkled with
lemon-pepper, italian seasoning, garlic powder, cayenne pepper and
paprika in a little EVOO. Set aside to cool. Toasted the insides of two
english muffins under the broiler. Assembly: bottom muffins, light coat
of mayo, tomato slice, chicken slices to fit, iceberg lettuce to fit,
slice of cheese, top muffins. Simple and delicious, imho.
