Default Recipe: Baked Snapper

Hi Gang
Cooked a super-easy fish dish tonight for company (3 persons). It was
delicious.

Per portion (180g)

1 portion Snapper fillet
1 large fresh basil leaf
2 slices ripe tomato
2 slices boccochini (sp?) cheese
1 tbsp white wine (or stock)
olive oil
2 tsp basil pesto
salt, pepper

In an individual gratin dish, drizzle a tsp oil oil on base. Place 2
slices tomato, season, topped with a basil leaf. Place portion fish on
top. Spread 2 tsp pesto over fish. Top with 2 slices cheese, season.
Pour over a little white wine.

Preheat oven to 200degC. Place gratin dishes on tray in oven,
uncovered. Cook for 10-15 min or until fish is cooked through. Test by
piecing with a knife point.

Place gratin dish on larger serving plate. Decorate with a basil/herb
sprig and a lemon wedge. Serve with salad/potatoes of your choice on
side. I used a mesclun salad vinegriette & 1" cubes of roasted sweet
potato. A soft bread was good to mop up the delicious juices.

Easy recipe, prepare beforehand and refrigerate. A snap! Use best fish
you can afford. Atlantic salmon would good too, I think that was the
original suggestion.
