Default NY Strip steaks, tenderizer needed?

The NY strip is my favorite cut - a good balance of tenderness and
fantastic flavor.

If your meat is less than ideal, and you're worried about it being tough:
1. Don't overcook it
2. Cut it on the bias, like you would skirt steak, carving slices
obliquely rather than cutting straight down

Screw tenderness! There'll be flavor a-plenty!

I decided to pop into this thread because it's cross-posted to RFC, and I
wanted to say hi to all my buddies there.

I recently started the low-carb way of eating again, after having gone on a
several months' long M&M and popcorn binge and gaining all my weight back.
Doing pretty well now.

Anyway, sorry for interrupting the steak discussion. I'll just slink back
to ASDLC now.

Hi Carol! Here's hoping the binging stops and it works this time. (Fingers,
toes and eyes crossed)

Hey Alan! Haven't seen you in awhile. I do believe that the binging is
part of the past, as long as I don't eat stuff that's on Dr. Bernstein's
"no-no" list. LOL! I'm losing weight faster this time than I did last
year, I feel great, and my diabetes is under better control. Good talking
with you!
