Keeping simple syrups
 
While doing this film shoot, I made a couple simple syrups, one plain and
one vanilla, for the coffee tray. I did it this way because it was less
messy than letting them spoon sugar! but that's besides the point. What I'm
wondering is...how long will it keep? I keep it in a jar in the fridge.

Simple Syrup beginner here, though all I have read assures that when
sealed and refrigerated, it will keep indefinately.

A true simple syrup (fully saturated solution) can do fine at room
temp. Just like in every bar.

Although others have claimed indefinite refrigerator life for simple
syrup, most cookbooks seem to suggest at most six months in the fridge
(or three weeks at room temperature). I've never managed to keep
simple syrup around for that long.
