fire roasted tomatos
On one of the cooking shows fire roasted canned tomatoes were used and
recommended. I have tried them and they really are good. They have a slight smokey taste. I found them in the health food section of the grocery store. The spaghetti sauce discussion made me think of them. |
Easy enough to make at home.. Stick a fork in one end of a ripe tomato
and slowly rotate it over the flame of a gas stove. When the skin shrinks enough so it's wrinkled and cracked and starting to char , wrap it in a damp cloth and let it sit for a while to steam and cool. Then peel it. I often do this under a running faucet. Works with peppers too.. D. |
