Default Apple Pie Cake

Apples are plentiful right now and this a favorite at our house.



Apple Pie Cake






Ingredients:

1/4 cups of butter

1 cup of sugar

1 egg



1 teaspoon cinnamon

1/2 teaspoon baking soda

1 cup of flour



2 1/2 cups of chopped apples

1/2 cup of chopped nuts

1/4 cup of raisins (optional)



2 Tablespoons of hot water

1 teaspoon of vanilla







What to do:



Cream butter, sugar, and egg. Beat well.



Sift flour with spice and soda. Then add the flour mixture to the creamed
butter mixture.



Add apples, water, vanilla, nuts and raisins (optional), mixing well.



Bake in greased pie plate at 350° for 40 to 45 minutes.

I make a very similar cake...

Jewish Apple Cake
Cooking spray
2 teaspoons all-purpose flour
1 cup granulated sugar
1 cup packed brown sugar
1/2 cup sweetened applesauce
1/2 cup orange juice
1/3 cup vegetable oil
2 tablespoons (1 ounce) 1/3-less-fat cream cheese
2 1/2 teaspoons vanilla extract
3 large egg whites
2 large eggs
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
3 1/2 cups sliced peeled apple (about 1 pound)
3 tablespoons granulated sugar
2 tablespoons ground cinnamon
2 tablespoons chopped walnuts

Preheat oven to 350=B0.
Coat a 10-inch tube pan with cooking spray, and dust with 2 teaspoons
flour. Set prepared pan aside.

Beat granulated sugar and next 8 ingredients (sugar through eggs) at
medium speed of a mixer until blended. Lightly spoon flour into dry
measuring cups; level with a knife. Combine flour, baking powder, and
salt. Add flour mixture to sugar mixture, beating at low speed just
until blended. Combine apple and remaining ingredients. Spoon half of
batter into prepared pan. Top with half of apple mixture. Repeat with
remaining batter and apple mixture. Bake at 350=B0 for 1 hour and 15
minutes. Cool 10 minutes in pan on a wire rack; remove from pan. Cool
completely on wire rack.=20

Heres my contribution. This is a favourite around here.

Upside down apple cake
-----------------------------

4 - 5 tart cooking apples

lemon juice

2 tbs. butter

1 cup (packed) brown sugar, sifted

1 egg

1 cup sugar

1 cup whipping cream

1 tsp. vanilla extract

2 cups all purpose flour

2 tsp. baking powder

powdered sugar

Peel the apples and remove the cores.

Slice the apples paper thin with a sharp knife or mandolin then sprinkle
lightly with the lemon juice to keep the apples from discolouring.

Place the butter in a 9 inch round, shallow baking dish,. Place in a
preheated 325 F degree oven until melted, then remove from oven. Do not
turn off heat.

Sprinkle the brown sugar over the butter. Overlap the apples slices in
the baking dish, working from the centre to the outside with only 1/4
inch between each overlap, until the bottom is covered.

Place the egg in a medium sized mixing bowl and beat well with an
electric mixer. Add the sugar gradually and beat until mixed. Mix the
cream and vanilla. Sift the flour with the baking powder, then add to
the egg mixture alternately with the cream mixture, beating well after
each addition.

Pour over the apples. Bake for about 35 minutes or until a tooth pick
inserted in the centre comes out clean.

Let cool for 10 minutes, then turn out onto a rack and cool. The apples
should now be on top. Place on a cake plate and cut into servings.
Sprinkle each serving with powdered sugar [optional] and if desired [my
preferance] serve with a basic chantilly cream. This makes 6 - 8
servings.

Another version is

Quick apple cake
--------------------

1 & 3/4 cup sifted cake flour

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

sugar

1/2 cup melted butter

1 egg

buttermilk

1 tsp. vanilla extract

2 tart apples peeled and thinly sliced

1 tsp. cinnamon

Sift the flour, baking powder, soda, salt and 1 cup of sugar into a
mixing bowl.

Pour 1/4 cup butter into a 1 cup measuring cup, then add the egg. Fill
the cup with buttermilk. Pour into the flour mixture and beat
vigorously for 1 minute or until the batter is smooth.

Stir in the vanilla.

Pour the remaining butter into an ovenproof skillet or baking dish.

Pour the batter into the skillet, the arrange the apples over the top.

Combine the cinnamon with 2 tbs. of sugar and sprinkle over the apples.

Bake in a preheated 350 F degree oven for 35 - 40 minutes.

Serve hot from the skillet or cool for 5 minutes, the invert onto a
rack. Slide onto a serving dish. This makes 8 - 10 servings.
