Made my first noodle Saturday while watching the bread rise. I'd always
thought pasta would be difficult. The recipe was simple - 1 cup flour (I used whole wheat), half teaspoon salt, 1 egg, and a tablespoon or two of milk to make a stiff dough. The dough has to be kneaded, which develops gluten and makes it a little hard to roll out. I'd roll it out wide and thin and then it would spring back again. But it didn't take very long to make a thin sheet of it. A pizza wheel cut the noodles quickly and they spent the day curling up on a cookie sheet, drying out. I haven't had pasta in the house in ages. I don't much like white pasta, but storebought whole-wheat noodles are spendy and often sit on the store shelf so long that they're rancid. So while I might have made something fancy, it was rainy out and I was craving tuna casserole. So my first wheat noodles went into a plain cheese sauce with tuna and toasted buttered crumbs on top. Yum. If you haven't made a noodle yet, you've just got to try it! Kathy |
