Pressure frying french fries ?
 
Hi

Is there anyone who has experience from pressure frying french fries ?
Would be very intrested in any information you have from it ?

Why would you want to do such a thing?

Besides, proper french fries require double-frying, at two different
temperatures: the first to cook through, the second to color and puff.

DON'T Use an ordinary pressure cooker for this! The seals are not designed for
the high oil temperatures. I understand this is part of the secret taste for Fast
Food produced French Fries? Never tried it, but all the Google searches will
caution you to make sure you have the right equipment

Beef fat is the secret ingredient for Fast Food Tasting french fries, at
least it was a McD's.
